Why is grocery shopping such a pain? At least now we have grocery pick up. I’m convinced whoever invented it must be a mom. Can we all just take a moment to thank her because I think most of us can agree, it’s the best. Unfortunately, we still have to go through the dreaded process of deciding what will be for dinner every day, and if you can stomach chili for the third week in a row. Hello Pinterest. If I tried everything that I have pinned on my food board I probably wouldn’t be able to fit through my front door. Why does everything that looks so good have to be so unhealthy? And that brings us to an entirely new dilemma, whatever we fix needs to not only taste good, but it also needs to be good for us (for the most part anyways.) I will typically defer to my husband on this, because honestly he can spot a good healthy recipe much better than I can. So, enough of the chit chat, check out my week day dinner menu below. Fritos Bowl

This recipe is a weekly go-to for us. There is plenty enough for my husband and me to eat the next day, and it warms up well. I substitute the ground beef for ground turkey and instead of using a crock-pot, I use my instant pot to save some time. Just brown the ground turkey, add the rest of the ingredients, pressure on high for ten minutes, and it’s ready to eat. It’s quick, healthy, and delicious, what more can we ask for? I’ll top my bowl off with a sprinkle of shredded cheese and a dollop of sour cream, then grab some Fritos and enjoy.

I love all the ingredients in this recipe, so this was yet another great dish to add to this week’s list. The water chestnuts added a nice texture, and overall it was a light yet flavorful meal. The recipe advises only pressuring for three minutes, but having used my instant pot very frequently I knew the chicken would not be cooked thoroughly. So, I seared the chicken breast using the saute setting and then pressured everything for eight minutes. Another alternative would be using chicken tenders instead of chicken breast. If you overpressure, the broccoli will become overcooked, so be careful.

One of my favorite fall dishes we have tried recently is this Autumn Apple Chicken recipe. It’s the perfect combination of salty and sweet. Did I mention how great it smells while it’s cooking? Another great easy recipe that is relatively healthy and quick.

Our new recipe for the week is pressure-cooker lamb pitas. Our local grocery does not stock lamb, so we are substituting beef. I have always been a huge fan of gyros, so I have high expectations for this recipe. I will be sure to let you all know what I think.
